let them eat cake

Chocolate and cake are the best of comfort foods....And anything you ate as a child. So here is cake that I ate as a child. So yummy and moist and easy. I don't think I have ever posted a recipe for anything on the blog. That says something. I craft. I don't cook. But this cake is awesome and even I can't screw it up....too easily at least.
Lazy Daisy Cake
  • 4 eggs
  • 2 cups sugar
  • 1 tsp vanilla
  • 2 cups flour (we used whole wheat flour here as it was what I had on hand)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 2 tsp butter

*Preheat the oven to 350 F. degrees.

- Put the milk and butter in a small saucer pan on the stove to warm.

- Beat eggs.

- Stir in sugar and vanilla to the beaten eggs.

- Stir in flour, baking powder and salt.

- Stir in the warmed milk and butter from the stove.

- Pour into a greased 9x11 cake pan and bake for 30 minutes.

While the cake is baking, make the topping...

  • 6 tbsp butter
  • 1/2 cup brown sugar (very packed)
  • 1 cup coconut

- Put ingredients into the small saucepan and warm until the butter is melted and mixed with the coconut and brown sugar.

- When the cake is done, pat the topping on and put the cake back in the oven for a few minutes to brown the coconut yumminess.

So good!!!!!!!

Oh, sounds so yummy. I will have to try this! And it sounds easy...an added bonus in our busy lives!

I DO remember this cake, Jackie! It was the picture of it with the coconut topping that triggered the memory. I knew I should have picked up some coconut while at the store! Next time... I can almost taste it! (Excellent for a potluck, too, I bet!)

It's making my mouth water just thinking about it! Mmm!
I've just got back into baking after an (almost) 5yr gap so this is useful to know. Coconut, yum! I'm going to brave the elements in a couple of days so i'll have to pin a list of ingredients to my head, even then though it's quite probable i'll dtill forget them! *sigh* My memory's shot! xXx

This sounds incredible and I have printed it out so I can make it.....not that we need the calories but it sounds like total comfort food : ) Thanks for sharing all you do. I hope your day is wonderful today and that 2009 has many moments of awesome.

this sounds so yummy. i have a recipe similar but without the topping. I wonder what i have been missing all this time. I can not wait to find ouT!!
